Happy Wednesday! Ready for another easy, healthy, and delicious vegan recipe? This black bean soup couldn’t be easier. Throw some beans and veggies in a pot and forget about it! This recipe is high-protein, low-carb, low-fat, and above all, super tasty.

We’re adding some toasted cumin seeds here to fancify this soup a little bit. They add a nice zing of flavor and a tiny, satisfying crunch. You could also try coriander seeds for a little something different. The quinoa gives this filling soup an even heartier, grain-like element.
Smoky black bean soup with toasted cumin seeds
- 1 lb dried black beans
- 1 tsp olive oil
- 1 medium onion (diced)
- 2 large carrots (peeled and chopped)
- 4-5 large banana peppers (seeded and chopped (optional))
- 2 tbsp ground cumin
- 8 cups vegetable broth
- 2-5 cups water
- 1 cup quinoa
- 3 tbsp cumin seeds
- fresh lime juice and chopped scallions (for topping (optional))
- In a large bowl, cover the beans with water and let soak 8-12 hours. Drain and rinse.
- In a stock pot, heat the olive oil over medium heat.
- Add the onions and sauté for 5-7 minutes, then add the carrots and banana peppers (if using).
- When the vegetables are soft (after about 10 minutes), add the ground cumin.
- Cook for 1-2 minutes, then add the beans, vegetable broth, and 2 cups water.
- Bring the pot to a boil, then turn down the heat and cover.
- Simmer for 60-90 minutes, checking the liquid level every 20 minutes. Add more water if necessary.
- When the beans are soft, add the quinoa, and continue to cook for 15 minutes.
- While the quinoa cooks, heat a large skillet over medium high heat. Toss in the cumin seeds and heat until the seeds are just toasted and fragrant, about 3-4 minutes.
- Ladle soup into bowls and top with toasted cumin seeds, a squeeze of lime juice, and some chopped scallions.
Even though it’s all sunshine and palm trees here in southern France, we have our share of chilly days (although to be fair, “chilly” here is 50 degrees). But no matter where you are, when the weather calls for a warm coat, nothing hits the spot more than a steamy bowl of soup!
